Scrambled tofu

The images are in reverse order, as am I at this moment… in any case, scrambled tofu can be made with any of your favorite flavors and ingredients. I use a little of my favorite curry powder in a little olive oil low heat, then add/mash the firm tofu, as that is less watery than the silken, and a pinch of salt and pepper. We eat it with corn tortillas, chapatis or rice. It is vegan unless you add dairy, my daughter the parmesan lover adds parmesan.
