This salad is pretty self evident.
Use two carrots a person up 8 people/servings
1 large bunch of cilantro with root
1 tablespoon maple syrup
2 tbsp vegenaise or nasoya or egg free mayo
Shred carrots, wash, revive in water then chop cilantro including stems, squeeze and add lemon juice, add optional ingredients as desired. eat after 10 minutes – the lemon will soften the carrots.
