Carrot salad with cilantro and lemon

This salad is pretty self evident.

Use two carrots a person up 8 people/servings
1 large bunch of cilantro with root
2-3 lemons
optional:
1 tablespoon maple syrup
2 tbsp vegenaise or nasoya or egg free mayo
raisins.
Shred carrots, wash, revive in water then chop cilantro including stems, squeeze and add lemon juice, add optional ingredients as desired. eat after 10 minutes Рthe lemon will soften the carrots.
